In the main kitchen, the Dietary Manager Staff #2 accompanied the surveyor and found unlabeled and undated sausages and fried eggs in separate bowls inside a stand-alone refrigerator. Staff #2 stated the eggs were used for puree and that the sausages were leftovers, but the staff who prepared the food had forgotten to date and label them. Staff #2 removed the items from the refrigerator. During the continued kitchen tour, the surveyor observed multiple items in the walk-in freezer without date labels, including a bag of frozen sausages, two bags of chicken drumsticks, one bag of chicken breasts, one bag of chicken strips, and two small bags of unknown food items. Staff #2 stated he would need to check the log to know how long the items had been in the freezer and confirmed that all refrigerator and freezer items should have been labeled and dated. He discarded the two unknown frozen items and labeled the frozen items. Later, in the [NAME] and Winter kitchen, milk and desserts were seen in the refrigerator without dates or labels, and in the spring and summer kitchen on unit 4 cups of milk and 3 cups of juice were observed in the refrigerator without dates or labels. Staff #2 stated these items should have been dated and labeled, and the concern was discussed with the NHA and DON, who agreed the items should have been dated and labeled.
