She also stated that the pureed diet did not have nutrient parameters that restricted menu items. Review of the facility’s pureed diet showed that the default grain servings provided to non-select residents on the pureed diet ranged from 2 to 4 servings on most days, with only 3 days providing 6 servings. Review of the regular diet showed that on 2 days the default grain servings were below the expected amount, including 3 servings on one day and 5 servings on another. The General Manager stated the pureed diet menu items should mirror the items served on the standard general diet menu pattern, and the Patient Services Manager/Registered Dietitian stated the pureed diet servings seemed a little low. The Regional Clinical Nutrition Manager/Registered Dietitian reviewed the menus, acknowledged they did not meet the expected minimum daily grain servings, and stated she would review and adjust the menus to meet the menu planning expectations of 6 servings of grains each day.
