Staff A acknowledged that the food did not maintain the correct temperature and confirmed that the steam table wells were set on setting #3. The Dietary Manager stated that staff are expected to take food temperatures before meals to ensure they are served at the correct temperature, and if not, the food should be reheated to above 165 degrees before serving.
