Dishwasher Not Maintaining Required Sanitizing Temperature
Summary
The facility failed to maintain the dishwasher in safe operating condition in the kitchen. During observation on 07/13/26 at 8:31 AM, the Dishwasher Aide was placing breakfast dishes in the dishwasher while it was running at 109 degrees, and there was a white substance built up and bubbling in the water at the dispensing spout. The Dishwasher Aide stated she did not know what the substance was and said she knew the dishwasher was supposed to run at a minimum of 120 degrees, but when asked about the dishwashing procedure she did not respond. Record review of the Dish Machine Temperatures and Sanitizing Log for July 2026 showed temperatures documented as 120 for wash, 120 for rinse, and 200 parts per million for AM, Noon, and PM entries from 07/01/26 through 07/12/26. The log for 07/13/26 was already filled out for AM and Noon with the same readings before the dishwasher was observed running below the required temperature. The Maintenance Director stated he had not had issues with the dishwasher reaching 120 degrees during monthly inspections, but on 07/13/26 he noticed the issue for the first time and said he would adjust the water temperature to allow hot water to flow to the dishwasher. On 07/14/26, the Dietary Manager observed the dishwasher over 5 cycles and reported the temperature reached only 114 degrees during the observation, despite stating it read 132 degrees when she ran it. She stated the dishwasher should not take 5 cycles to reach 120 degrees and said she would have it serviced. The report also states the Dietary Manager re-educated dishwashing staff on ensuring the dishwasher maintained at least 120 degrees while washing dishes. The Administrator stated she expected staff to follow policy and procedure for kitchen cleanliness and noted there had been a lot of broken equipment and the kitchen had not been kept very well.
