Improper Hand Hygiene and Glove Use in Kitchen

Summary

The facility failed to store, prepare, distribute, and serve food in accordance with professional standards for food service safety in 1 of 1 kitchen reviewed. During interviews, dietary staff reported they had been trained in food service safety, handwashing, and glove use, and both stated they were expected to wear gloves when handling food, remove gloves between tasks, and wash hands before putting on new gloves. One dietary aide also stated that improper hand sanitation could cause cross contamination and make a resident sick. During observation, one dietary aide reached over the steam table and obtained a meal plate with bare hands, touching the food surface of the plate. She stated she was not sure whether she was supposed to wear gloves for that task. In another observation, a dietary aide removed a glove, placed it on the steam table, used her bare hand to pick up a mobile phone, and texted while holding the phone with her gloved hand. She then placed the phone on the steam table between cloth napkins and sanitized silverware, picked up the dirty glove and put it back on, removed it again and discarded it, and continued the task without washing her hands before putting on a new glove. A further observation showed the same dietary aide walking from the steam table to a tray storage cart and placing her clothed elbow on a stack of clean lunch trays without washing her hands or using gloves. The NSD stated staff are not supposed to have cell phones in the kitchen and that the mobile device is not sanitary, and he expected all staff to follow proper hand sanitation. The RD and Regional Culinary Operations Manager both stated staff are expected to wear gloves when handling food, remove gloves when leaving the line or touching clothing or face, and avoid bringing cell phones into the kitchen. Record review showed staff were in-serviced on handwashing, glove use, cleanliness of uniforms, hair net use, and not bringing foreign objects into the kitchen.
