Kitchen Stove and Oven Not Maintained in Safe Working Order

Summary

The facility failed to maintain the commercial gas range and oven in safe operating condition. During observation of the kitchen, surveyors found carbon buildup on 8 of the 10 burners on the commercial gas range, and the right-side oven was reported by kitchen staff to often fail to cook at the proper temperature. The kitchen staff member stated the oven had been having this problem for a long time and that it would sometimes work correctly for only about two weeks before again failing to heat properly. During meal preparation observations, the right-side oven was set at 350 degrees but the chicken removed from it registered 140 degrees after being in the oven since before 9:00 AM. The kitchen staff member said the food often had to be moved from the oven to the stove burners to finish heating, and that she had to watch it closely to avoid burning or scorching while trying to get it to the proper temperature for service. On another observation, the right-side oven was set at 350 degrees but measured 230 degrees when opened, while the left-side oven measured 382 degrees when set at 400 degrees. The same staff member also demonstrated that the two far right burners did not light automatically and had to be lit with a lighter. Interviews with the kitchen staff, Maintenance Supervisor, and Maintenance Director showed the issues had been known for weeks or longer. Staff reported the burners not lighting and the oven not heating properly to maintenance verbally, but there were no work orders in the maintenance log related to the stove or burners. The Maintenance Supervisor and Maintenance Director stated there was no scheduled cleaning time for the stove top burners and that they were cleaned only as needed. The last technician documentation provided showed the stove/oven had been adjusted on 11/13/25, and the facility policy required maintenance of equipment in a safe and operable manner at all times.
