Dishwasher Temperature and Food Processor Drying Lapses

Summary

The facility failed to store, prepare, distribute, and serve food in accordance with professional standards for food service safety in the kitchen. During observation of the puree process, a food processor was used to puree hamburger patties and then green beans. After each use, the food processor was washed in a 3-compartment sink and then placed on a tray to go through a wash cycle in the low temperature/chemical dishwasher. When the wash cycle was completed, the food processor was picked up and placed back on the machine while liquid was still dripping from it, and it was then used again for food preparation without being allowed to air-dry completely. The dishwasher was also observed not functioning properly during the puree process. The wash cycle temperature did not go above 88 degrees F, even though the data plate on the dishwasher stated the wash cycle minimum temperature should be 120 degrees F. Staff stated they had checked the dishwasher temperature earlier that morning and believed it had reached 120 degrees F, but later the DM stated a switch had been turned off to the water booster, which was why the dishwasher was not reaching the required temperature. The DM stated she was not sure who switched off the water booster. The facility policies reviewed stated that the low temperature dishwasher wash period shall be at least 40 seconds with a temperature of 120 degrees F, and that food processor bowls should be inverted after cleaning to drain dry on shelves or trays with vented slots or bar netting. Staff interviews reflected that dietary staff had been trained to allow the food processor to air-dry and to check dishwasher temperatures, but one staff member stated she did not let the food processor air-dry because she was trying to get the puree food done on time for the meal and had forgotten to check the dishwasher temperature during the puree process.
