Dishwashing Machine Failed to Reach Required Temperature
Summary
The facility failed to ensure the dishwashing machine was maintained in a safe and operational condition when its temperature did not reach the recommended 120 degrees Fahrenheit. During a concurrent observation and interview on 2/9/2026 at 8:50 a.m., the Dietary Aide ran the dishwashing machine and the temperature gauge read 104 F. The Dietary Aide stated it was okay to continue using the dishwasher even though the temperature was not reaching 120 F as long as the chemical sanitation level was within 50 to 100 parts per million. The Dietary Supervisor later stated the dishwasher should read 120 F to properly sanitize and kill bacteria present on dishes and utensils. The dishwasher was observed to remain below the required temperature after repeated cycles. The Dietary Aide ran the dishwasher five times and the temperature gauge still did not reach 120 F, with the gauge reading 110 F after five cycles. Later that day, the temperature gauge read 102 F during another cycle. The Dietary Supervisor stated he did not know the dishwasher was not working until 10:30 a.m. and would call a service provider. The Administrator stated he was notified around 11:00 a.m. that the dishwasher was not reaching the required temperature. The Registered Dietician stated the dishwasher not reaching 120 F should be reported and addressed to ensure dishes are cleaned properly and to prevent food-borne illnesses among residents. The facility policy stated inadequate temperatures should be reported and corrected immediately, and if hot water does not meet requirements, dishwashing should stop until the temperature is adjusted.
