Summary

The facility failed to store emergency food and water supplies in accordance with required storage conditions. During a kitchen tour and observation of food storage areas, surveyors found that the facility did not store Meals, Ready to Eat (MREs) according to the manufacturer’s guidance. The MRE label stated they should be kept in a dry, cool, dark location, with an optimal storage temperature of 55 degrees Fahrenheit, and noted that high temperatures could speed the degradation of nutrition and vitamins over time. The facility did not provide a policy for water and/or food storage. Surveyors observed 5-gallon water jugs used for water dispensers and cooking during a boil water advisory sitting outside at the back of the facility under a covered porch with no temperature control. They also observed the MREs stored in an outside storage building that was not climate controlled. The Dietary Manager stated she was not aware of the manufacturer’s recommendation to store the MREs at 55 degrees Fahrenheit and said she had no climate-controlled area for the emergency meals. The Administrator stated her expectation was that all foods and water were to be safely stored and acknowledged that improperly stored foods could cause illness to residents.
