The kitchen supervisor acknowledged the lack of organization and supervision due to staffing issues, while the CDM admitted to being ultimately responsible for monitoring food storage but could not explain why expired food items were still in active storage. The CDM also mentioned that the receiving dietary aide is tasked with checking food storage twice a week, but this process was evidently not effective in preventing the observed deficiencies. The administrator confirmed that staff are trained on food storage requirements upon hire and that cooks are responsible for monitoring food storage weekly. However, the survey findings indicate a systemic failure in adhering to these protocols, as evidenced by the presence of multiple opened and undated food items across various storage areas. This failure to properly manage food storage has the potential to affect all residents, given the facility's census of 19.
