Observations revealed that the Dietary Manager did not have a thermometer in the two-door refrigerator, and the shelves were rusted. The facility's policies on preventing foodborne illness through proper food handling and employee hygiene were not adhered to. Employees failed to wash hands between tasks, maintain clean and trimmed fingernails, and wear appropriate hair coverings. The Dietary Consultant emphasized the importance of these practices, stating that hands should be washed frequently, hair coverings should be worn before entering the kitchen, and dry ingredients should be stored in airtight containers without foreign objects inside.
