In the walk-in freezer, several bags of food items such as okra, celery, squash, and country fried steak were found unsealed. The dry storage room contained opened items like cherry gelatin, green split peas, fettuccini, a large jar of peanut butter, and a bag of grits without use-by dates. Additionally, a bag of breadcrumbs was not sealed, and metal bins containing sugar, rice, and flour were not labeled or dated. These lapses in food storage and labeling could potentially affect all 181 residents who consume food from the kitchen. Further observations revealed significant issues with cleanliness and sanitation in the kitchen. A large industrial food slicer had dried food that could be scraped off, and several baking sheets and plates were stacked while still wet, with some having dried food particles on them. The Eco Lab Dishwasher was also found to be dirty on the outside with dried food. Interviews with the Director of Dietary and the Administrator highlighted expectations for compliance with food safety standards and the importance of training kitchen staff, but these expectations were not met, leading to the deficiencies noted.
