During observation in the dishwashing room, the dish machine’s final rinse temperature was 176 F, and on the next run it was 172 F. Staff A, a Dietary Aide, confirmed that the dish machine is a high-temperature unit. Review of the February 2026 dish machine temperature logs showed multiple dates when the final rinse temperature was below 180 F, including readings of 172 F, 170 F, 175 F, 178 F, 174 F, 165 F, and 179 F, with no documented corrective action. Review of the facility’s policy titled Dishwasher Temperature stated that the final rinse temperature shall be 180 F or above but not exceed 194 F, and that corrective actions shall be taken for any final rinse temperature below the required level. The FDA Food Code 2022 was also reviewed and stated that for mechanical warewashing equipment other than specified machines, the fresh hot water sanitizing rinse may not be less than 180 F. Review of the ECOLAB XL-HT dish machine specification showed a minimum sanitizing rinse temperature of 180 F. Staff C, the DON, confirmed the policy and manufacturer’s instructions.
