Unsafe Food Handling and Storage Practices

Corona Regional Medical Center D/p SnfCorona, California Survey Completed on 06-05-2026

Summary

Safe and sanitary food preparation and storage practices were not maintained in the kitchen. During observation, several serving pans were stacked and stored while still wet, and the cook stated kitchen equipment should air dry before being stacked because a wet environment promotes bacteria growth. The facility policy for cleaning and sanitizing pots and pans required items to be thoroughly air dried on a clean drain board after sanitizing. Two cooks with facial hair were observed preparing food without proper beard restraints. One cook with facial hair was not covered while working in the cook area, and another cook with facial hair was not fully covered with a mask while preparing a meal in front of the stove. The Director of Food Services acknowledged that both cooks needed to wear beard restraints. In addition, dust and debris were observed on the rack used to store cleaned kitchenware, pots, and pans, and brown/black debris was observed accumulated on the wall above the walk-in freezer. The Director of Food Services stated the debris was dust and that the kitchen should be kept clean. Grime was also observed on food service equipment, including black grime on the coffee machine and black sticky grime on the base of the can opener. Several food items were not properly labeled, including a white plastic container of rice without a label, three shakers with brown powder labeled only with a use-by date, and sausage and hot dog packages in the freezer labeled only with an opened date. In the Annex nourishment room, three expired beverages belonging to a resident were found in the refrigerator, including fruit punch, vitamin water, and zero sugar soda with expired dates. The DON stated the beverages were brought in by the resident's family, and the DFS stated they were beyond the manufacturer's use-by/best-by date and should be discarded.
