Summary

Food was not stored, prepared, distributed, and served in accordance with professional food safety standards, and kitchen sanitation practices were not followed. During an initial walkthrough of the kitchen, the Director of Dining Services verified multiple sanitation and food storage issues, including a soiled walk-in refrigerator floor, beverage spills in the reach-in refrigerator, a soiled drip pan under the stove, a soiled microwave interior, a soiled toaster, soiled fronts of both conventional ovens, soiled handwashing sinks, soiled can openers, and a heavily soiled microwave in the side pantry. The dish machine also had missing temperature documentation for multiple dates in May 2026 and for breakfast service on June 1, 2026. The surveyor also observed multiple food items that were not properly labeled or dated, including juice cups in the walk-in and reach-in refrigerators, two containers of honey thickened juice, an opened and undated package of flour, a foam cup of sugar that was not sealed, labeled, or dated, and a container of coffee that was not dated. On follow-up observation, one can opener remained soiled, the dish machine temperature had not been taken and recorded before washing breakfast dishes, the three-compartment sink water temperatures were not being recorded, and a soiled pair of gloves was found on the countertop near the coffee maker.
