Summary

Food safety practices were not followed in the kitchen during dish sanitation and food service. Cook D washed a cutting board in the three-compartment sink, then submerged each end of the board in the hot water sanitation sink for less than one second before placing it behind the faucet to air dry. During interview, Cook D confirmed the cutting board was not submerged for at least 30 seconds as required and that it had already been put away with other clean cutting boards. Dietary supervisor B stated staff had been trained on the proper three-compartment sink process and that dishes were supposed to remain submerged in the hot water sanitation sink for at least 30 seconds at 180 degrees Fahrenheit. During lunch plating, Cook C handled sour cream cups and repeatedly got sour cream on her fingers, but instead of washing her hands she wiped the food onto a green anti-slip mat on the serving line. She also used her bare hands to pick up pieces of baked potato that fell off plates and placed them back into the serving bin. Cook C confirmed she should have washed her hands when they became soiled. In a separate observation, Cook D washed and dried her hands, placed the paper towels into the trash can, pushed them down, and her hands contacted items in the trash can; she then did not perform hand hygiene before going to the clean dish area and handling clean plates. Cook D confirmed she did not wash her hands after touching the trash can and then handled clean dishes with potentially soiled hands.
