Summary

Food was not stored in a safe and sanitary manner in multiple campus kitchens and refrigerators. During observation on 05/04/26, multiple cheese products in one kitchen refrigerator were found without open dates, including Italian cheese, whole milk mozzarella, non-smoked provolone, finely cut Parmesan, and thick-cut Mexican cheese. Other refrigerated items also lacked complete labeling, including margarine, cottage cheese, Amish potato salad, hashbrowns, and peas, and dry goods such as flour, powdered sugar, and brown sugar were stored in unlabeled containers. CNA #165 confirmed the items did not have open dates and stated she was unsure of the correct process for labeling food. Dietary Technician #499 stated specific facility policy information could not be provided and then instructed CNA #165 that all refrigerated food items must have a completed label with the received date, open date, and use-by date. Additional observations in another kitchen found expired food items and opened foods without open dates. The kitchen storage room contained Hawaiian sweet rolls expired on 05/02/26 and deli rolls expired on 04/29/26. The resident-facing refrigerator contained cottage cheese expired on 04/28/26, an opened package of diced ham with no open date, and an open package of bacon with no open date. Dietary Technician #119 confirmed the expiration dates on the rolls and cottage cheese and confirmed the opened ham and bacon had no open date. Facility policy stated food was to be labeled and dated properly to assure stock rotation and prevent food illnesses.
