Dirty dry food storage room with stains and food debris

Summary

The kitchen dry food storage room was found to have a dirty floor and walls behind the shelving, with dark stains, streaks, and powdery/stringy material on the front and left walls and on the floor below them. The dry food storage room had vinyl tile flooring, painted walls, and vinyl wall base molding, and the stained areas were partly hidden by shelving until the wire racks were moved away from the walls for closer inspection. Surveyors observed circular and irregular black stains on the front wall, streaks and black spots with material that flaked off when scraped, and similar dry black stains and powdery/stringy material on the left wall and base molding. On the floor, there was a solid dried black spot in the corner, scattered black stains extending away from the walls, and multiple circular stains near the left wall. Food debris was also found under and behind the shelving, including salt packets, cereal flakes, broken jelly packets stuck to the floor with dried sticky material, and ketchup packets stuck together. The Dietary Manager stated he had not known about the stains or debris behind the shelving and explained that the dry food storage room was cleaned weekly on Mondays and the walls monthly, but he had difficulty cleaning under the shelves and behind the stationary can shelf. He said the front wall had last been cleaned a few months earlier after standing water was present in the corner during a snow storm, and he had not cleaned the front wall in April because no one was available to help move the can shelf. The Regional Director of Operations, Maintenance Director, and Administrator all acknowledged the black spots and streaks, and the Administrator stated the expectation was that food be stored in a clean environment.
