Food Storage and Dish Sanitizing Deficiencies

Summary

Food was not consistently labeled, dated, or sealed in the kitchen and storage areas. During observations of the kitchen and dry storage areas, surveyors found multiple open and undated items, including flour, caramel topping, chili powder, powdered sugar, barbeque sauce, grits, cornflakes, chips, cake mix, muffin mix, brown sugar, cobbler crust, pizza dough, breaded cod, cookie dough, sausage, pork chops, rolls, carrots, mayonnaise, relish, lunch meat, and cartons of milk, some of which were partially open or unsealed. The facility’s Food Storage policy required opened products to be sealed and labeled with the date opened and expiration date, but these items were observed stored without those safeguards. The refrigerator also contained nine cartons of milk with a best-used-by date of 4/25/26, and two open cartons of Med Pass and one open carton of milk were later observed in the refrigerator without dates. The Dietary Manager stated that opened food should be dated and sealed, and that Med Pass should not be stored in the kitchen refrigerator but in the nurse’s refrigerator. The observations showed that food items were being kept in a manner that did not match the facility’s stated storage requirements. The dish machine and sanitizing sink were also not maintained with sufficient sanitizer concentration. The facility’s policy required the low-temperature dish machine rinse cycle to have 50-100 PPM chlorine, and the pot sink sanitation record showed many missing entries for time, PPM, and checker documentation. During observation, the Dietary Manager could not obtain a reading on the dishwasher test strip, and the Dishwasher Repair Representative stated the dishwasher’s squeeze tube was bad and needed replacement. For the sanitizing sink, the Dietary Manager suspected there might not be enough sanitizer, and the repair representative stated the sanitizer hose had been placed in the wrong container.
