Food Storage, Labeling, and Thermometer Handling Deficiencies

Summary

Food was not stored, prepared, and served in accordance with professional standards in the kitchen. During an initial tour with the Certified Dietary Manager, plates, bowls, and silverware were observed stored right side up on a table outside the dish room and were soiled with food debris. The CDM stated the items should have been stored face down and then began removing them. A bottle of heavy-duty degreaser was also observed stored directly between the juice and coffee machine, and the CDM stated it should not have been stored there. In the reach-in cooler behind the meal prep area, a container of food with a blue lid and a small piece of pie in a clear plastic container were stored next to other food items with no labels or dates. The CDM identified the items as employee food and stated employees should not be storing their food with facility food and drink items, although the employee breakroom cooler was not working. The cooler also contained an opened gallon of whole milk about half full with a best-by date of 5/31/26 and a large foam cup containing an unidentifiable dark jelly-like substance with no label or date. The CDM stated the substance was gelatin and should have been labeled appropriately. The walk-in cooler contained two large bags of fresh parsley, with some parsley brown in color and visible droplets inside the packaging. One bag was labeled delivered 5/14/26 with a best-by date of 5/18/26, and another was labeled delivered 5/4/26 with a best-by date of 5/12/26. A large clear container with plastic wrap held a large amount of fresh parsley submerged in water, and the dates on the wrap were illegible; the CDM identified the dates as 5/20 to 5/30/26. During lunch meal prep, [NAME] E was observed placing the thermometer into food so that the top portion of the thermometer base, which was held with a bare hand, also went into the food. The probe was cleaned before and after each item checked, but the upper portion of the thermometer was not.
