Summary

The facility failed to effectively clean and maintain food service equipment and related surfaces in the kitchen area. During an initial tour with the Dietary Manager, Registered Dietician, and Registered Dietician in Training, the wall/floor juncture tile adjacent to the mechanical dish machine was observed to be soiled with accumulated and encrusted food residue along an area measuring approximately 25 feet in length. The Dietary Manager stated she would have dietary staff thoroughly clean and sanitize the area as soon as possible. The mechanical dish machine was also observed during the final rinse cycle with a psi gauge reading of 33 psi. The Dietary Manager stated she would contact the contractual vendor for repairs. In addition, the mop closet interior entrance door surface was observed to be etched, scored, and particulate, and the Registered Dietician stated she would place the issue on her phone for entry into the electronic maintenance system. Record review showed the facility’s Kitchen Sanitation policy required the food service area to be maintained in a clean and sanitary manner and that utensils, counters, shelves, and equipment be kept clean and in good repair.
