Summary

The facility failed to ensure staff served palatable, attractive, and flavorful food at appetizing temperatures for two out of two test trays. The facility policy titled General Food Preparation and Handling stated food items would be prepared to conserve maximum nutritive value, develop and enhance flavor, and keep free of harmful organisms and substances. During the Resident Council meeting, 18 residents voiced ongoing food concerns, including frequent use of canned foods and meals that were not appealing; 17 of 18 residents stated the food had no taste and had poor appearance. During a lunch tray observation, the surveyor noted the Mexican rice was white in color, and Dietary Staff #1 stated it was made without red spices because residents said it was too spicy and did not like it with the red spices. On the first test tray, the fish taco was 126F and described as having good flavor, but the corn was 120F with a plain flavor and the Mexican rice was 125F, white in color, lukewarm, and tasted plain with no herbs or spices detected. On the second test tray, the pierogi casserole was warm and flavorful, but the peas were 120F and bland, the cabbage was 123F and bland with no seasoning, and on the mechanical soft tray the peas and cabbage were again lukewarm and bland with no spices. The Administrator stated food items should be prepared per policy and served at appropriate temperatures.
