Summary

The facility failed to store food in accordance with professional standards for food service safety in the kitchen dry storage room and refrigerator. During observation, multiple food containers and items were found with food particles, grease build-up, dried drippings, and cracked lids. Items observed included clear plastic containers holding breakfast cereal that were not dated and had cereal particles in the bottom, a disposable plate with cooked eggs, beans, bacon, and bread covered with a napkin and stored on top of metal food cans, and seashell pasta stored in a tied plastic bag that was not dated. Additional observations included opened bags of corn chips, cinnamon sticks, cinnamon sugar, roasted chicken gravy, and crushed corn that were not sealed and/or not dated when opened, as well as a large container of chocolate fudge frosting with a cracked lid and a large plastic oil container with oil dripping down the side. In the refrigerator, a plastic bottle of chocolate syrup dated as opened 3/12/26 had dried drippings on the side, a bottle containing tomato paste had dried drippings, a plastic syrup dispenser dated 3/05/26 had dried dripping on the lid and below the handle, and a large container of cottage cheese dated 2/02/26 had a cracked lid. The ice machine also had white calcium build-up on the front below the ice maker and around the edges of the bin door, with white particles present. The Dietary Supervisor stated they had attempted to remove the calcium build-up but were unable to do so, and the cleaning schedules for April 2026 did not list the ice machine.
