Summary

The facility failed to ensure food in the kitchen was stored, prepared, distributed, and served in accordance with professional standards for food service safety. During an observation of the kitchen, multiple food items were found with no visible expiration date or use-by date, including yellow cake mix, corn flakes, muffin mix, lime gelatin mix, spaghetti pasta noodles, powdered sugar, mashed potatoes, pinto beans, chicken gravy, chocolate syrup, vegetable mix, hot dogs, chicken nuggets, and battered corn nuggets. One bag of muffin mix was also not properly sealed and was exposed to air contaminants, and a 32-quart bin of creamer mix was not properly sealed and exposed to air contaminants. The observation also identified a bag of pork chops with visible freezer burn. During interviews, the DM stated he was responsible for ensuring the kitchen met guidelines for food storage and sanitization, confirmed the surveyor observations, and stated the items should have been properly sealed and dated. The ADMIN stated he oversaw all departments, had been made aware of the kitchen concerns, and acknowledged that expired or improperly labeled items should not be served to residents. The facility policy stated that all foods shall be labeled and dated prior to being stored.
