Food Service Area Not Maintained in Clean and Sanitary Condition

Summary

The facility failed to follow proper food-handling procedures and maintain the food service area in a clean and sanitary condition. During observations in the kitchen, surveyors found a can opener on the kitchen table that was dirty, had peeled metal lining, and was chipped and rusted. A food processor was observed cracked with white, crusty buildup. A clear plastic bag of breaded chicken was not labeled with the item name or the open date, a container of chopped garlic in the produce refrigerator was not sealed, the rubber seal on the ice machine cover door was cracked and falling apart, and a container of ready-mixed mashed potato powder in the kitchen spice rack was not sealed properly. During interviews, Food Service Worker 1 stated the can opener should be clean and in good condition and that the observed condition could cause food contamination. FSW 1 also stated food containers should be sealed properly and labeled with the item name and open date to prevent contamination and use of spoiled food. FSW 1 stated the food processor should not be cracked or have buildup because it could contaminate food, and stated the damaged ice machine gasket and cracked door could allow rubber particles to fall into the ice. The Clinical Nutritional Manager reviewed facility policies stating equipment and utensils must be kept clean and in good repair, and that foods must be covered, labeled, and refrigerated appropriately; the CNM stated the facility's policy and procedures were not followed.
