Wet Insulated Domes Used During Meal Tray Preparation

Summary

The facility failed to store, prepare, distribute, and serve food in accordance with professional standards for food service safety when insulated domes used for plate covers were not properly air-dried before meal service. During observation on 04/09/2026 at 11:29 a.m., Dietary Aide N was seen placing prepared plates on trays and covering them with insulated domes that had pooling water inside; as the domes were turned over and placed on approximately 7 plates, water dribbled across the plates. The trays were then placed on a rack and sent to 600 hall. During the same observation, the Dietary Supervisor saw the wet domes being placed on plates and instructed Dietary Aide N to remove them from the serving area so they could be racked and allowed to dry thoroughly. The Dietary Supervisor stated the domes should be allowed to air dry totally and explained that this was to prevent residents from getting sick and prevent dishwater from getting on the food. Dietary Aide N stated that not drying the lids all the way could allow water to drip in the food and cause stomach upset, and Dietary Aide O stated the moisture could allow bacteria growth and possibly cause residents to get sick. The Administrator later stated the insulated domes should have been fully dried before use to prevent contamination issues, and the facility policy required machine warewashing techniques to air-dry all items because towels may contaminate items.
