Summary

The facility failed to ensure food was served at palatable temperatures for 1 of 1 residents observed receiving a meal in the transitional care unit. During the lunch dining service, a nursing assistant delivered a tray to R88 that had been temped by a dietary aide before delivery; the honey mustard chicken was 117 degrees Fahrenheit, the potato fingerlings were 118 degrees Fahrenheit, and the mixed vegetables were 100 degrees Fahrenheit. The dietary aide stated the chicken was supposed to be 145 degrees and above when served and said the food should be warmer than that when eaten. The dietary aide and cook stated the food sat on the trays too long before residents were served. R88 stated the chicken was cooked but definitely not warm or hot enough for their liking. The dietary manager stated the facility struggled with serving food at desirable temperatures because residents in the dining room were served first and then staff plated food for residents who ate in their rooms, leaving the plated food on the rolling cart for a lengthy time before delivery; the dietary manager also stated it was not desirable to serve food that was 117 degrees. The facility policy required foods and beverages to be distributed and served in a manner that prevented contamination and maintained proper temperature.
