During a test tray observation, the meal carts were lined up in the kitchen and none were plugged in, and the cart for the 600 hall was delivered to the unit before trays were served to residents. The test tray, evaluated immediately after the last resident had been served, showed the stuffing at 118.7 degrees F, the steamed carrots at 115.6 degrees F, and the red velvet bar at 82.6 degrees F. The dietary manager acknowledged awareness of concerns about cold food and stated he checked temperatures before and after service, while the NHA stated the facility used insulated trays, a plate warmer, and a metal tray-serving cart, but the cart was not plugged in while in the kitchen during observations.
