Food Storage and Kitchen Ceiling Deficiencies

Summary

Food was not stored in accordance with professional standards for food safety when surveyors found a can of pears with a dented rim and a package of pasta open to the air on a shelf in the dry storage area of the facility kitchen. During the observation, the Dietary Supervisor stated that dented cans and unsealed packages of pasta are at risk for contamination and should not be used. Surveyors also observed ceiling tiles throughout the kitchen that were stained, separating, peeling, and had significant gaps between tiles. Ceiling tiles above the dishwashing area were peeling, there were gaps between tiles throughout the kitchen and near the coffee maker and a preparation counter, one ceiling tile was separated and exposed the area above it, and along the back wall by a fire sprinkler several tiles were heavily stained with one adjacent tile missing. The Director of Maintenance stated there should be no gaps, loose tiles, missing tiles, stained tile, or peeling tile in the kitchen to keep debris and pests from falling into the food.
