Summary

The facility failed to follow the recipe for the scheduled lunch menu item, barbeque riblette, for residents on regular, mechanical soft, and pureed diets. During lunch observation, residents on a regular diet were served a barbeque riblette without sauce, while residents on a mechanical soft diet were served ground meat with a squirt or drizzle of ketchup on top. The planned menu for the meal included barbeque riblette, pasta salad, and fruit cup. The recipe for the barbeque pork riblette required barbeque sauce to be added during preparation, and the mechanical soft version required the prepared riblettes to be ground and then moistened with barbeque sauce or prepared broth. On interview, the Dietary Manager stated that barbeque sauce was not available to cook the riblets in, that ketchup was added to the mechanical soft trays, and that the pureed version was a plain riblette pureed with chicken broth. The facility application for Medicare and Medicaid documented that 33 residents resided in the facility.
