Summary

The facility failed to employ a sufficient number of staff with the appropriate competencies and skill sets to carry out food and nutrition services. During the noon meal service, dietary aide #1 and cook #1 first prepared plates for residents who required assistance with eating in the Sunflower dining room, then prepared room trays using dinnerware. As meal service progressed, the facility ran out of clean dinnerware and switched to black foam disposable plates approximately three quarters of the way through service. The cook stated the facility did not have enough clean dinnerware for all residents and had to switch to disposable plates, and said this happened more often than it should. The dietary manager stated that when two dietary aides were working, they were responsible for retrieving room trays and washing dishes before the next meal service, but when the kitchen was short a dietary aide, CNAs were expected to return room trays to the kitchen, and the trays would trickle in, leaving not enough time to wash the dishes.
