Later, the Administrator confirmed that both the Dietary Supervisor and Assistant Dietary Supervisor were not qualified Directors of Food and Nutrition Services and were only enrolled in an online Certified Dietary Manager course, with anticipated certification at a later date. This lack of a qualified Director of Food and Nutrition Services had the potential to affect all residents receiving meals prepared in the facility’s kitchen.
