Summary

The facility failed to ensure that the emergency food supply was fully stocked in accordance with its emergency menu and policy requirements. Policy review indicated that the facility was expected to maintain adequate emergency food stock, and the emergency menu outlined specific items to be available for meals during emergencies. During observation and interviews, it was confirmed by the Dietary Manager and Administrator that several required food items, including juice, crackers, peanut butter, beef stew, corn beef hash, beets, sloppy joe, and ravioli, were missing from the emergency food supply. At the time of the survey, the facility census was 84, with 83 residents receiving meal trays, but the necessary emergency food items were not present as required by the facility's own emergency preparedness policy and menu guide.
