Summary

The facility failed to serve the correct portion sizes of pureed chili as specified in the planned menu for five residents on pureed diets. Observations during the lunch meal service showed that the cook used a #8 scoop, which provides 1/2 cup, instead of the required #6 scoop, which provides 2/3 cup, as indicated on the daily menu spreadsheet and the facility's portion control chart. The Food Service Director confirmed that the wrong scoop was used, and the Dietitian stated that the menu should be followed to ensure residents receive the appropriate nutrients. Facility policy requires that food be served in portions indicated on the cycle menu and that serving utensils be checked prior to meal service to ensure accuracy.
