The RD stated the kitchen staff should have been honoring residents’ food preferences and said, “We did not follow our policy and procedure.” Resident 20’s record showed diagnoses including muscle wasting, COPD, bipolar disease, dysphagia, pain, and adult failure to thrive, and the MDS indicated a BIMS score of 15, showing he was cognitively intact.
