Summary

The facility failed to ensure that menus were followed and residents' nutritional needs were met when the correct portion sizes for pureed Mandarin Oranges were not adhered to during meal preparation. Specifically, during an observation of puree preparation, dietary staff used a number 8 scoop (four ounces) instead of the required number 10 scoop (three ounces) as specified in the facility's recipe and portion control policy.
