Summary

A deficiency was identified when a kitchen staff member, Cook A, handled residents' food without wearing gloves, specifically removing bread from its package with bare hands. This action was observed during a kitchen inspection, and it was confirmed by both the Certified Dietary Manager and the Director of Nursing that gloves should have been worn when handling food intended for residents. The facility's policy on hand hygiene for dining services requires hand hygiene before and after handling food, after removing gloves, and between tasks, but this protocol was not followed during the observed incident. At the time, the facility had a census of 47 residents, all of whom received food trays from the kitchen.
