Summary

The facility failed to practice hand hygiene in accordance with professional standards for food services when the District Dietary Manager (DDM) used her bare finger to poke holes in the aluminum foil covering pans on the hot food line and peel it back to expose the food. During tray preparation, the DDM was also observed holding plates in a way that allowed rolls to touch her bare hands at the thumb. The facility policy, Proper Hand Washing and Glove Use, stated that all employees will use proper hand washing procedures and glove usage in accordance with State and Federal Sanitation Guidelines and that gloves are to be used whenever direct food contact is required. In interview, the DDM did not acknowledge the need for glove use during tray service and stated that gloves were not required unless hands might come into contact with foods being served or ready-to-eat items such as sandwiches. When told she had been observed touching the rolls multiple times, she stated that gloves would have prevented possible contamination. The Infection Preventionist Nurse confirmed that dietary staff should wear gloves during plating and serving because they may be asymptomatic with illnesses such as COVID and flu, and the Administrator acknowledged the unsanitary handling of ready-to-eat food in the kitchen and stated it was her expectation that policy be followed to protect residents.
