Summary

The facility failed to ensure that portion sizes for breakfast items were served as planned according to the dietary spreadsheet. On the observed breakfast tray line, a staff member used incorrect scoop sizes for several food items, including ground ham, pureed ham, pureed eggs, scrambled eggs, and pureed muffins. Specifically, larger scoops than specified were used, resulting in serving sizes that did not match the planned portions. The Registered Dietitian confirmed that the correct scoop sizes were not used, and the staff member involved stated that he became confused and referred to the lunch portion sizes instead of those for breakfast. This deficiency had the potential to affect all 94 residents in the facility, as the incorrect portion sizes could impact the nutritional needs of the residents.
