The Registered Dietitian confirmed that the portions served were less than required and stated that this would result in residents not receiving enough calories and nutrients. The deficiency had the potential to affect all 132 residents receiving meals from the facility's kitchen, as the incorrect portion sizes were observed during regular meal service. The facility's policies required that menus and portion sizes be followed to meet residents' nutritional needs, but these procedures were not adhered to during the observed meal services.
