Summary

The facility failed to ensure that only qualified dietary staff worked in the kitchen, as required by licensure regulations. Record reviews showed that an individual, SR-A, who was not an employee of the facility and did not meet the qualifications outlined in the Dietary Aide job description, was present in the kitchen assisting with food preparation by peeling potatoes. This occurred due to a shortage of staff in the kitchen. The Dietary Manager confirmed that SR-A was not qualified and should not have been working in the kitchen, and the Administrator was unaware of SR-A's involvement until after the fact.
