Summary

The facility failed to employ a staff member with the appropriate credentials to supervise and manage the dietary department. During a kitchen tour, the Dietary Manager (DM) stated he was not a Certified Dietary Manager (CDM), was not enrolled in certification classes, and only held a ServSafe Food Handler certificate, which did not include management training.
