Summary

The facility failed to maintain, store, prepare, distribute, and serve food under sanitary conditions, as evidenced by inaccurate monitoring of refrigerator and freezer temperatures and improper maintenance of the dishwasher machine temperature. The temperature logs for the refrigerator and freezer showed no variations over several months, with the refrigerator temperatures recorded as 36, 40, and 41 degrees Fahrenheit, and the freezer temperatures consistently at 10 degrees Fahrenheit. Additionally, the dish machine temperature logs indicated a constant reading of 100 degrees Fahrenheit, which is below the required temperature for proper sanitation. During an observation, the Dietary Supervisor was unable to locate the manual internal thermometer for the refrigerator, and the digital thermometers were set to Celsius, which the supervisor could not read. The Dietary Supervisor admitted to copying the previous day's temperatures without verifying them. The Assistant Dietary Manager revealed that the dishwasher temperature was intentionally set to 100 degrees Fahrenheit due to difficulties in obtaining accurate readings. The facility's Administrator acknowledged the need for a temperature booster to achieve the necessary dishwasher temperature of at least 120 degrees Fahrenheit. These deficiencies had the potential to affect 18 residents who received meals from the kitchen.
