The facility failed to maintain the kitchen in good repair and sanitary conditions, as observed during a survey. Several issues were noted, including exposed electrical wires due to a missing cover on a fluorescent light, brown stains on ceiling tiles, chipped kitchen floors, missing baseboard tiles, and cracked walls with exposed concrete. Additionally, door frames and air vents were found to be loose, chipped, or rusted, and ceiling tiles were damaged or stained. These actions were contrary to the facility's handwashing policy, which requires handwashing before handling clean equipment and after touching dirty items. Furthermore, the facility did not follow proper food storage procedures. Dietary Aide #1 attempted to refreeze leftover ice cream cups that had become soft, which is against the manufacturer's instructions to keep the product frozen. The Dietary Manager acknowledged that the ice cream should not be refrozen and decided to discard it. These observations indicate a failure to maintain food safety standards and proper hygiene practices in the facility's dietary department.
