The dishwasher's temperature gauges were inaccurate, with the rinse temperature consistently below the required level for sanitization. Employee 1, a cook, was observed using the dishwasher without recording temperatures, and the Director of Dining and maintenance staff acknowledged the issue, stating they had contacted a repair company. The report was reviewed with the Nursing Home Administrator, highlighting the facility's failure to adhere to professional standards for food storage, preparation, and equipment maintenance.
