Summary

The facility failed to maintain proper kitchen sanitation practices, as observed during a surveyor's inspection. On the morning of September 15, 2024, the surveyor, accompanied by the Chef, noticed a black colored substance inside the ice machine in two areas. The Chef mentioned that the maintenance department was responsible for cleaning the ice machine and was unaware of the substance's presence. Later, the Maintenance Director (MD) confirmed that the ice machine was cleaned monthly, typically in the middle of the month, but could not identify the substance or determine how long it had been there. The facility's policy titled 'Cleaning Kitchen Equipment,' revised in December 2023, mandates that all utensils, counters, shelves, and equipment be kept clean and in good repair, free from breaks, corrosions, open seams, cracks, and chipped areas. It also specifies that ice machines and storage containers should be drained, cleaned, and sanitized according to the manufacturer's instructions and facility policy. Despite these guidelines, the facility failed to adhere to its policy, as evidenced by the presence of the black substance in the ice machine. During a meeting with the surveyor team, the Facility Operator and other administrative staff were unable to provide additional information regarding the issue.
