The culinary director (CD) acknowledged these issues, noting that leftover food should be discarded after three days to prevent food-borne illness, but admitted that he had been absent from work for a week and no one else checked the unit fridges in his absence. The facility's policy, as stated by the administrator, requires labeling food with the resident's initials and the date of opening, and the CD is responsible for checking unit fridges for expired food. However, the administrator also stated that staff should check food dates even when the CD is not present.
