The DM also failed to ensure proper infection control practices, as she was observed coughing and sneezing while working, and had declined to be tested for Influenza-A despite an outbreak in the facility. The registered dietitian (RD) confirmed awareness of the staffing issues and the outbreak, emphasizing the need for proper infection control and training for all staff involved in meal preparation and serving.
