Summary

The KM was unfamiliar with the testing of sanitizing solutions, the chemicals used as sanitizing agents, and the use of cooling logs for tracking leftover foods. Additionally, the KM was observed handling clean dishes without washing her hands after handling soiled dishes, citing a lack of staff as the reason. The kitchen had only six staff members to perform all dietary services, including food preparation, service, dishwashing, cleaning, ordering, and storage.
