Additionally, Cook 1 demonstrated a lack of knowledge regarding the proper use of the 2-compartment sink for manual dishwashing. Cook 1 was unaware of the required immersion time for items in the sanitizer solution, and the posted guidelines did not provide this information. The facility's policy for manual dishwashing procedures was incomplete, missing critical information about the immersion time. This deficiency in staff training and competency placed residents at risk for illness due to potential cross-contamination and improper sanitation practices in the kitchen.
